(KNSI) — A new distillery focusing on whiskey will soon launch in St. Joseph.

It will be called Obbink Distilling after its master distiller and co-founder, Gregg Obbink. A press release says it will bring “a new, otherworldly twist to the process of aging whiskey.” He is a former satellite systems integration engineer for the Earth and Space Sciences Division at Los Alamos National Laboratory in New Mexico.

Obbink Distilling will focus on whiskey for now but will add spirits to its profile later. The plan is to operate on a “test it, bottle it, brand it, distribute it” model. They expect to have their product on the shelves at liquor stores in late 2023. They say each whiskey will have its own theme and identity, which guests can sample in their cocktail room, nestled on the north side of St. Joseph. There will be over 20 spirits to test on a rotating, limited basis.

Obbink has created a proprietary process that accelerates the maturing process for whiskey, shortening it from years to days. Co-founder and Chief Operating Officer Adam Weber says the process has taken over ten years of research and development and uses types of wood rarely seen in the market.

Ground has already been broken on the physical location, titled “The Test Site,” which will feature the distillery and interior and exterior seating. An anticipated opening date is set for the summer of 2023.

Obbink is joined in his venture by Weber, investor and co-founder Lukas Inveiss, and Chief Marketing Officer Ian Scherber. The three all graduated from St. John’s University.

Inveiss says opening a distillery in St. Joseph “is a dream come true. Being former Johnnies we hope to bring a unique cocktail experience to this amazing community that helped shape our lives.”
