(KNSI) – For many St. Cloud residents and visitors, avoiding gluten isn’t just a fad or a diet choice, it is a necessity.

Many local restaurant owners understand celiac disease personally. Visit St. Cloud Executive Director Rachel Thompson tells KNSI News Boulder Tap House, and others go out of their way to live up to Wednesday’s gluten-friendly theme for Restaurant Week.

“We did a feature this year with Boulder Tap House. The owner’s son has celiac disease, and so they dedicated not only a menu to it but an entire fryer in their kitchen.”

Thompson says putting in a good-faith effort goes a long way with customers, sharing a story from her own family. “My sister got married a number of years ago here in St Cloud, and one of her bridesmaids is gluten-free. And she wanted to give her something that was just as special as the rest of us, and Mixing It Up was that opportunity for her to get something specific that she knew was made in a friendly kitchen.”
