(KNSI) — The day before the start of Lent comes with many names depending on where you are. In some Midwestern cities, it’s affectionately called Pączki Day, after the Polish treat.

Cold Spring Bakery Owner Lynn Schurman told KNSI News late Monday that the seasonal delights are a hit in the run-up to Fat Tuesday.

She jokes, “The demand has actually been growing in the past several years. We’ve had some really nice orders go out for people that apparently are either Polish or at least want to be Polish for tomorrow.”

Schurman talks about how the delicacies compare to traditional donuts.

“The difference is that the dough itself is richer. There’s a little bit more sugar, more shortening in it, and then we put way more filling in. We double fill them so the custard ones have twice as much custard or the blueberry ones have twice as much blueberry.”

Her bakery begins filling orders three weeks ahead of Fat Tuesday. Today is when they’re at their most popular.

Workers punch in at 11:00 the night before to begin preparing the dough for baking.
