(KNSI) – A home bakery is moving out of the kitchen and into a storefront location in the St. Cloud area. Corvus Coffee and Bakeshop is scheduled to open next month in the old Dunn Brothers location at 71 County Road 120, where St. Cloud and Sartell meet.
Co-Owners Laura Wolfram and Kayla Adams met while working together at a local coffee shop and learned they wanted to own their own business. Laura and Kayla said they felt there was a need for an independent high-end craft bakery in the market. Laura says they shared the same vision for a bakery and coffee shop.

“You see down in the cities these like craft coffee shops, but sometimes they kind of feel a little bit you know, cold or you know, snobby. And so, we want to have the craft level of that but with the welcoming kind of community feel of a small town coffee shop.”
The two started Corvus Bakeshop and began selling cupcakes and cakes online in February of 2020. By December, they knew they had enough business to look for their own storefront bakery and coffee shop. Laura talked about what she thinks the secret to their success has been.
“Our focus is on the quality. Quality in the craft and quality in the ingredients that we use. We use as many organic, natural whole food ingredients as we can. We get our ingredients from our local community in whatever way we can. And of course, the craft; taking the time to produce something that looks beautiful and tastes beautiful.”
Not only do they focus on getting locally available organic ingredients, but they also focus on having allergy-free options.
“I don’t think that people should have to compromise on taste, just because they happen to have an allergy. So, it’s been my goal to create things that have a good texture and a good taste,” said Laura. “Trying to create something that is conscientious of other people’s allergies shouldn’t be an afterthought,” said Kayla.

Allergy-free options include dairy-free and gluten-free items.
“Our motto with the home based backshop was ‘feel good sweets’ so, we want people to have a treat but also feel good about it and not feel sick afterwards,” said Laura.
When Corvus moves in its storefront, it’ll feature its famous cakes and cupcakes along with an expanded menu of traditional coffee shop offerings such as muffins, scones, bagels, and cookies. Along with a full espresso drink lineup, coffees, and teas. Corvus will also have a food menu.
The bakery isn’t accepting any more orders until they open the storefront location.
