ST. CLOUD, Minn. (KNSI) - A longer process than expected, but Waldo's Pizza will celebrate their official day of business in their new building on Saturday.
The beloved pizza restaurant, originally set to open in December, has found new life former Book Em's Bar building along West St. Germain in downtown St. Cloud.
Owner Mike Henning says they've been getting their feet on the ground with a pair of limited-hour soft openings in the last few days.
"We're serving the public for 3 hours tonight (Friday), just to test everything out and give our staff some training," Henning says. "But Saturday, we kick off our full menu and regular business hours, 11 am to 10 pm."
In addition to pizzas, he says the menu includes chesseburgers and spaghetti with homemade meatballs.
Henning says they've hired 8 employees and plan to add another 8 in the future. They're holding off on securing a liquor license until next July.
Waldo's Pizza is 30 years old, and had been located in the Waite Park Super America before closing in June of last year.
